The secret of tannins is the key behind the excellence of the wines in the DEMUERTE collection<\/strong>. The behavior of this element depends, to a large extent, on the final product obtained in a winery.<\/span><\/p>\n

At WINERY ON CREATIONS we pay special attention to tannins<\/strong>, as they are decisive in the production process of our wines. That is why, on this occasion, we wanted to dedicate our post to tannins. Although many people know they exist, very few really know what they do or how they do it.<\/span><\/p>\n

 <\/p>\n

The secret of tannins<\/span><\/h2>\n

Tannins are fundamental substances to achieve the quality and character desired in a wine<\/strong>. Their presence and characteristics make the difference between an ordinary wine and an extraordinary one. In order for you to know what they do and how they do it, we wanted to go deeper into tannins and their relationship with the production of DEMUERTE wines.\u00a0<\/span><\/p>\n

 <\/p>\n

What are wine tannins<\/span><\/h2>\n

Tannins are natural polyphenols<\/strong> <\/a>(antioxidant molecules) present in grapes, seeds and skin, but not only this. They are also found in the wood of the barrels used during the wine aging process.<\/span><\/p>\n

Tannins are responsible for the sensation of dryness and astringency in the mouth that is often associated with red wine consumption. They also play a crucial role in the structure, flavor and longevity of the wine, giving it complexity and character.<\/span><\/p>\n

For all these reasons, the presence and participation of tannins is a determining factor in the achievement of any wine<\/strong>.<\/span><\/p>\n

 <\/p>\n

Tannins and wine quality<\/span><\/h2>\n

The presence and quality of tannins determine the excellence of a wine. Thus, the best wines have soft and velvety tannins, which integrate harmoniously with the rest of the elements. This brings balance and smoothness to the tasting experience<\/strong>.\u00a0<\/span><\/p>\n

Therefore, ripe and soft tannins are desirable in a wine’s maturation process. They do not overwhelm the palate and allow to appreciate the richness of flavors and aromas of any type of wine.<\/span><\/p>\n

On the opposite side are bitter, acidic and rough tannins. All of them offer roughness and acidity<\/strong>. They are not the most suitable for wine as they cause an unpleasant taste.<\/span><\/p>\n

Tannins in DEMUERTE wines<\/span><\/h2>\n

DEMUERTE wines have reached the pinnacle of excellence thanks to their unique and exquisite tannins. Tannins that offer a balanced and pleasant flavor and structure. Characteristics that have been praised in more than 40 countries around the world, and which have been possible thanks to the meticulous attention paid at WINERY ON CREATIONS to the quality of its tannins.\u00a0 Especially by winemaker and CEO, Pablo Cortes, who has dedicated years of research to achieve exceptional tannins in his wines.<\/span><\/p>\n

At this point it should be explained that the tannins in DEMUERTE wines come from two sources. On the one hand, from the new French oak barrels<\/a> used in the aging process. These barrels provide subtle notes of vanilla and spices, while offering structure to the wine<\/strong>. On the other hand, the careful selection of the Monastrell grape, the fundamental ingredient of these wines, which is grown in the area of Yecla, Spain.<\/span><\/p>\n

With all this, the result of the tannins in DEMUERTE wines is a perfect harmony between fruit, oak and tannins. Exceptionally good wines, with an exquisite complexity and silky texture; which have become a benchmark of excellence and sophistication in the wine industry, winning the hearts and palates of wine lovers around the world.<\/span><\/p>\n
